National Eat Your Vegetables Day (yep, it’s a thing)

We almost let this day slip by without notice!

Thank goodness we didn’t though, because it means I get to share with you our top 3 most popular vegetarian recipes of all time!

Okay, okay.
So this recipe is not based around vegetables, it’s made of fruit and nuts – but it was either that or a chocolate based recipe and I feel in the spirit of the day, it was the most appropriate option.
